Sugar Free Blueberry Muffins

Vegan sugar-free, gluten-free Blueberry and Cinnamon Muffins

Ingredients

  • 2 1/2 cups almond flour
  • 1/2 cup xylitol or other natural sweetener
  • 2 tbsp Ceylon cinnamon
  • 1 1/2 tsp baking powder or 1/2 tsp baking soda
  • 5 tbsp coconut oil melted
  • 5 tbsp almond milk or other milk of choice
  • 1/2 tsp vanilla extract no added sugar
  • 1 cup blueberries fresh or frozen
  • 4 medium eggs or vegan eggs

Instructions

  • Preheat the oven to 180 degrees C
  • Line a muffin tin with 12 muffin liners
  • Stir together the almond flour, xylitol, cinnamon and baking powder
  • Mix in the eggs, almond milk, melted coconut oil and vanilla extract, and mix until a smooth batter is formed
  • Fold in the blueberries
  • Fill the muffins liners with the mixture
  • Bake for 20 minutes, check they are done by inserting a toothpick. If it comes out clean, you are good to go!
